"wouldn't matter anymore"? His wife died. Apocalypse or not, any loving man would continue to wear it. If what you're getting at is 'why keep a reminder of the past on a hand that now belongs to a much harsher present', i think it's a material thing that keeps him grounded to who he is [was].
More than the wedding ring, it was Rick keeping Carol's watch what really moved me. He must have hang on to it since he left her, fighting zombies in the middle of the outbreak, during the siege against the Governor, while he laid dying at that old house with Carl.
Same as the ring is a connection to Lori and what they had, the watch was his connection to Carol until she got back.
