They are being really quite faithful to the books so far! I'm impressed. It would be nice if they did captioning of the Gaelic dialogue in English though. Perhaps they will on the episode itself--the whispering to Claire helps, but we're missing a lot of choice dialogue I'm thinking!
They won't use subtitles at all. Ron Moore said in an interview that it's deliberate. Claire doesn't know what they're saying, and neither does the audience (we never know in the books either, unless a character translates for Claire, or later on when she's picked up enough words to puzzle out general meaning at times). I think it's the right decision.
