That's hard to choose, I love several scenes for different reasons... But I vote Sherlock's insecurity, I like seeing him vulnerable, makes him more human...
I really love that this incarnation goes for the human side of Sherlock and frequently. Plus, again, anything to show off JLM's incredible acting skills.
It's actually called a singlestick and it's traditionally used as a way of training soldiers to fight with swords. Miller actually suggested the use of it because in the original Holmes stories, Sherlock was an avid singlestick-er.
