The only way to make sure you can't get info from a phone, burner or not, is to not put info on it. The phone still logs incoming and outgoing calls and any texts unless they're deleted manually.

Perhaps I watch too many cop shows, but shouldn't a hit man carry an untraceable burner phone so no one can get info from it?
